This delicious melt in your mouth, one bowl recipe also happens to be gluten, dairy, egg and refined sugar free. Perfect for breakkie on the run, school lunches or an afternoon snack. Definitely my go-to when I want to bake a tasty treat that is healthy and quick- 5 minutes plus baking time. I challenge you to just have one!
3 cups mashed banana
1/2 cup coconut flour, sifted
1/2 cup almond butter (can sub for any nut butter)
1/2 cup pure maple syrup
Preheat oven to 175 degrees celsius and line a 12 cup muffin tin.
In a large mixing bowl combine all ingredients. Pour batter into muffin liners until close to the top (they won’t rise).
Bake for 20-25 minutes. Allow to cool slightly serve warm with butter.
