These chewy, fudge cookies are our go-to favourite- perfect for an after-school treat. And guess what?! With no sugar, dairy or gluten they are HEALTHY and cook in 5-10 minutes.
1/2 cup almond meal
1/2 cup desiccated coconut
1 heaped tbs pure almond butter
5 medjool dates (pitted)
1 tbs maple syrup
1 heaped tbs cacao powder
few drops natural vanilla essence
pinch himalayan crystal salt
1-2 tbs dairy free chocolate chips
1- place all ingredients (except chic chips) in a food processor and blend to a dough, stir in chic chips.
2- shape dough into flat cookies and place on a lined baking tray
3- bake 5-10 mins on 180 degrees celcius. These cookies will burn easily, the aim of placing then in the oven is to slightly harden them.
4- allow to rest 15 minutes before serving
Yields 10 cookies. Can also be enjoyed raw!
